Broccoli Chicken Sausage with Pasta & Lemon Sauce

Our client recently enjoyed this dish so we wanted to share it with you! We know cooking can sometimes feel intimidating but this dish is an easy one-pot recipe! These simple ingredients are packed full of nutrients, like Vitamin C and Potassium. The antioxidants found in the broccoli, lemon, and garlic are especially needed right now as they protect our immune system! If you are a vegetarian, we recommend using vegetarian sausage and chickpea pasta in place of chicken sausage for protein.

Broccoli & Chicken Sausage Pasta in a Lemon Sauce.

Ingredients:

Small Shaped Pasta, 3/4 lb. (we used orecchiette)

1 Head of Broccoli

1 Pound of Sweet Chicken Sausage

3 Tbsp Anchovy Paste

3 Cloves of Garlic

Lemon, zest of 1

1/4 Cup Lemon Juice

3/4 Cup Olive Oil

1/2 Cup Parmesan

1/8 tsp Sea Salt

Fresh Cracked Pepper to taste

Red Pepper Flakes (optional)


Directions:

-Remove casing from chicken sausage or cut into bite-size pieces. Saute until golden brown and cook completely through.

-Cut the broccoli into bite-size pieces.

-In a large pot of boiling water (make sure to salt), cook pasta according to the directions on the box until al dente. Within the last three minutes of cooking, add broccoli to the pot as well.

-While the pasta is cooking, finely mince the garlic or use Microplane to get paste-like consistency. Whisk garlic, anchovy paste, lemon zest, lemon juice, salt, and black/red pepper together. Whisk in olive oil to form an emulsion.

-Once the pasta & broccoli are ready, strain and save one cup of the pasta water.

-In the same pot toss the pasta, broccoli, chicken sausage, and lemon garlic sauce together. Mix well.

-Add grated parmesan, salt, & fresh cracked pepper.
