Trick the Kid Zucchini Parmesan Tater Tots

We love this fun veggie tater tot recipe! It can be hard to get kids to eat everything we want them to. We call these Trick the Kid Tots because of their similar appearance to potato tater tots. This simple recipe can be prepared for dinner or made into a healthy snack! Feel free to swap out the grated zucchini for other veggies like broccoli and carrots.

Also, gluten free flour & bread crumbs can be used in place of regular flour. If you don’t have gluten free bread crumbs, you can substitute them with an additional ¼ cup of Parmesan cheese. When making any type of homemade tater tot, it is important to release the excess liquid after grating the vegetables. Too much liquid keeps the flour & egg from fully binding. Give it all you got when it comes to squeezing out the liquid to prevent any separating. This recipe isn’t just for kids, we hope you enjoy them as well!

Ingredients:

1 ½ Cups Grated Zucchini (about 3 medium size zucchini)

¼ Cup Flour ½ Cup Panko Crumbs

½ Cup Parmesan Cheese

1 Egg

1 tbs Italian Seasoning

¼ tsp Garlic Powder

¼ tsp Salt A pinch of Black Pepper

Directions:

Preheat the oven to 350º Wash & grate the zucchini. It is best to grate the zucchini onto paper towels to soak up some of the moisture. Once you are done, place zucchini into a strainer & squeeze out as much liquid as possible. As stated above, this is a very important step to making sure the tater tots stick together. In a mixing bowl, add the grated zucchini & the rest of the ingredients. Mix well. Line a tray with some oil. Start to shape the mixture into 1 ½ inch tots. Cook for 15 minutes , flip and cook for an additional 15 minutes until each side has a golden brown color. Allow to cool slightly. Serve with your favorite dipping sauce. We recommend blue cheese or the preferred kid favorite, ketchup.
