Why did you decide to become a chef? What other positions have you previously held?
After studying hospitality management, I worked in several management positions at country clubs and restaurants. All the postitions were front of the house and had a special events focus. Having always enjoyed cooking healthy food and entertaining it wasn't until I started cooking for families on the side that I saw a real demand for it. I haven't looked back since and I love doing it because it combines my natural inclination to take care of others. Surrounding myself with a lot of inspiring women is another plus and it is especially rewarding to help my client's who have children with an illness.
Is there a chef you admire the most? Who and why?
Two immediately come to mind; Gordon Ramsey and Ina Art. To me Gordon Ramsey's intensity and precision when it comes to cooking is like no other. He is a great motivator and sets the bar high for other chefs all over.
Ina's story, on the other hand, is relatable and one that I can identify with. She did not go to culinary school, is self-made, and took a huge chance when buying Barefoot Contessa in the Hamptons. She almost stumbled upon her career and went with it because of her love for food and belief in using seasonal, locally sourced ingredients.
What is your favorite cuisine?
Italian for sure! I could eat pasta almost everyday with fresh tomato sauce or pesto.
If you were asked to reduce fat and sodium in a menu, what would you do maintain flavor in the quality of the dish?
I find that using fresh herbs and citrus provide a lot of flavor without compromising the nutritional value in a meal. You can do so much whether it's a marinade, sauce, or simply adding a little zest to roasted veggies. There's so much versatility and different flavor pairings that can drastically elevate a dish.
