December Recipe of the Month: Moroccan Spice Marinated Chicken

Try this easy recipe for the most tender, flavorful chicken! This is one of my go-to's when I know I have a long work day ahead of me and want something to look forward to when I come home. 

I suggest letting it marinate for a minimum of 8 hours. If you are in a pinch for time, then use thinly sliced chicken breasts and marinate for at least a hour. 

Ingredients:

2 pounds of chicken breast

1/2 cup extra virgin olive oil

Juice from 1/2 lemon

4  cloves of garlic, crushed

1 tsp. salt

1 tbsp. cardamon

1 tbsp. cumin

1.5 tbsp. all spice

1/2 tsp. cayenne 

 

Whisk all ingredients together and pour into a zip-lock bag with chicken breast. Store in fridge and allow to marinate overnight or for 8 hours if possible.

Take chicken out of fridge one hour before cooking to allow to come to room temperature. 

Pre-heat oven to 400 °F and when ready cook for 25 minutes or until internal temperature of the chicken reaches 165 °F. 

Allow the chicken to sit for ten minutes before serving and enjoy!
